CSA weeks 1&2
Jul. 10th, 2020 09:53 amWe signed up for a weekly CSA delivery from Angelic Organics. This is our first time with an actual CSA - we've used flexible/informal options in the past. I'm pretty excited about the challenge of working with unfamiliar ingredients, as well as a general influx of All The Greens! Our first delivery was pushed back by two weeks due to heavy rain in May - this messed with our grocery budget a bit, but we still came in on target for June. Hooray!
June 27: broccoli, 2 summer squashes, 1 bunch each parsley, cilantro, kale, red leaf lettuce, and garlic scapes, 1 giant bag pea shoots.

- Roasted potatoes with garlic scape pesto: always a winner; served along with roasted parsnips/carrots with za'atar and pomegranate molasses.
- Farro broccoli bowls: so good, especially with a 6 minute egg
- Lemony pasta with zucchini and fresh herbs: fine, probably wouldn't make again
- Rice bowls with tofu and pea shoots: tasty, but HILARIOUSLY difficult to chew as I didn't remove enough of the stems
- Lettuce used as a wrap with my favorite lentil salad
- Green smoothies and salads
Meals:
- Roasted beets with arugula pesto: supposed to be served over polenta, but that was its own disaster
- Grilled squashes with more arugula pesto and salvaged leftover polenta
- Green onions snipped over the top of various things
- Swiss chard and beet greens with eggs for the kids' lunches
- Kuku sabzi using up a ton of greens
- Lettuce incorporated into multiple lunch/dinner salads
