CSA week 11

- 2 heads broccoli
- 1 bunch radishes
- 1 eggplant
- 1 bunch kale
- 1 bag arugula
- 1 bag lettuces
- 2 small green peppers (instead of 2 heirloom tomatoes, meh)
Meals:
I picked up a $1 bag from Open Produce, so we were rich with veggies this week, including 2 kuri squash from last week's box.
- Red kuri squash in red kuri red curry soup -- texture of the squash is really different than butternut, so this was thicker than expected
- Another squash + kale in a terrific kuri squash and mushroom tart -- perfect for a cool day and for future holiday menus. I used a crust from the freezer, but would like to make the rosemary crust next time.
- Eggplant in eggplant foccacia with olives and (homemade) ricotta with an arugula salad -- followed a number of recipe notes and prebaked the focaccia + also baked at a higher temp (425). This resulted in more of a thin/cracker crust rather than an oily/moist focaccia which was JUST FINE since that's what we prefer anyway.
- Broccoli in a favorite broccoli date spoon salad -- added tempeh because we always want more. Also we've been getting these dates in our Subscribe & Save order and they are WONDERFUL.
- Arugula and radishes in/on garlicky green rice with fried eggs -- always solid. Served with peas since the toddler doesn't typically like rice or leaves.
- Roasted veggies with arugula pesto
- Greens and radishes in salads
- Kale in smoothies
